Carroll BBQ Team takes 2nd Place at State Championship
A team of talented Carroll Dragon pitmasters took second place in the recent Texas high school BBQ Championship.

Teenage cooks from all across Texas gathered in Granite Shoals at the end of April to compete with smoked meat. Almost 600 high school students representing 109 teams met in Quarry Park for the 2025 High School BBQ State Championship. They were vying for a total of almost $70,000 dollars in scholarships and - equally valuable - best-brisket bragging rights in the Lone Star State.
It was a long weekend. The adolescent chefs were up at 3:30 Saturday morning to fire up their rigs and begin smoking meat. They competed in five categories: dessert, beans, chicken, ribs and brisket - all of which were judged throughout the day.
Carroll ISD actually has four competitive BBQ Teams: ‘Overtime BBQ’, ‘7 Bones BBQ’, ‘Until We MEAT Again’, and ‘O.G. BBQ’ (Other Guys). All performed well.
At the end of the contest, the ‘O.G. BBQ Team’ took 2nd place overall (as Reserve Champion) and only missed the top title by a single point.
In the Dessert category, the ‘O.G Team’ took first place with a fantastic key lime cheesecake. In the Beans Category, our ‘7 Bones BBQ Team’ took 6th Place. In Chicken, the ‘O.G. Team’ took 8th Place. In Ribs, our ‘Until We Meat Again Team’ took 5th place and the ‘O.G. Team’ took 6th place.
Overall, the ‘O.G. Team’ collected the second-most total points for the second place finish. As a reward, each ‘O.G. Team’ member received $4,000 in scholarships.
HS BBQ Inc is a non-profit that runs the competition for high schools from the Red River to the Rio Grande. To qualify for the State Championship, teams have to finish in the Top Ten at one of the 11 regional competitions held elsewhere in Texas. Carroll ISD qualified at several regional contests, finishing in the top 10 every time.
The competitive BBQ season is over for now, but you can bet this team of Carroll cookers will ‘Protect the Tradition’ and be back for more contests in the fall.
